Yeast is a living organism, and its activity is highly sensitive to its surroundings. If the environment is too dry, the dough develops a 'skin' that prevents it from expanding, leading to cracks in the oven. If it is too humid, the dough becomes sticky and loses its shape. DEBACK proofers utilize Ultrasonic Atomization or Steam Injection to maintain a constant relative humidity (RH) of 60-85%. Combined with a digital PID temperature controller (typically set between 30°C and 40°C), the proofer creates a 'tropical paradise' for yeast, ensuring a rapid and uniform rise.
